So being the Paleo Crossfitters that we are we make sure to eat a decent amount of protein. Why do humans need protein? It’s the building blocks for our body. Protein is used to build new cells, repair existing cells, maintain tissue, and make enzymes. Protein is a part of every cell, tissue, and organ in our body.
Good stuff, right? Right! And don’t worry about consuming too much protein. You won’t end up looking like this guy:

Mike and I like to eat natural, fresh, unprocessed foods. Typically we consume a variety of meat, veggies, fruit, and nuts. For about the past year we have also been buying Almond Honey Protein Bars from Rise (previously known as Boomi Bars). These are great if you’re looking for a quick, easy snack or even a meal (perfect for breakfast). One bar has 20 grams of protein! Seriously amazing – you can’t find that in many bars. So they totally fill you up. And another cool thing – they just consist of three ingredients! Wow…blows your mind, doesn’t it?!?!?! haha just 3! They are almonds, honey, and whey protein isolate.
The best thing about these? They are all natural meaning no preservatives, non GMO, and are gluten-free. So even though we don’t like to buy processed food we’ll make an exception with these.
In the past I used to make my own protein bars but then we just got in the habit of buying the Almond Honey Bars (I know, I know – because they are quick, easy, and so starts the downward spiral so pretty soon all we are going to be eating are Big Macs and Lean Cuisines….ahhhh gross!!). But yesterday that all changed! Mike has been asking for homemade protein bars for a while and I finally decided to make up a new recipe. Hopefully you’ll enjoy these! They are quick and easy to make. And best of all – I had all the ingredients in my cabinets already – yay! These are Paleo (with the except of the protein powder but we try to mostly buy a Grass Fed Protein Powder online so that it’s definitely better for you).
Blueberry Coconut Protein Bars
- 1/2 Cup Almond Flour
- 1/2 Cup Almond Butter
- 2 Heaping Scoops of Vanilla Protein Powder (about 3 oz or 75 grams)
- 2 Tbl Honey
- 2 Tbl Coconut Oil (Melted)
- 2-4 Tbl Coconut Milk (or Almond Milk or even Water)
- 1/4 Cup Shredded Coconut (plus a little extra for sprinkling)
- 1/2 Cup Blueberries
Ok, now for the directions. Get ready, they are highly complicated…mix together all of the above. Whew. That’s it. You can add more milk or water if the mixture is still too crumbly. You want to get it to a decent “paste” consistency.
Then, place about a 1/3 cup of the mixture onto a parchment-lined cookie sheet and shape like a bar. I was able to get six bars from this recipe.
Sprinkle additional shredded coconut on top. I baked mine at 350°F for about 12 minutes. And voila – homemade protein bars!
The best thing about these bars is that you can make these any flavor or add any additional mix-ins you want! I used blueberries because we just picked a ton from our blueberry trees out back and I was dying to incorporate them into another recipe (I made GF blueberry muffins the other week but wanted something different this week).
The blueberry/coconut combo reminds me of summertime but you can easily omit the blueberries, shredded coconut, and coconut oil (I know not everyone’s a fan of coconut). Add in dried cranberries (make sure to get the ones without any additional sugar added), chocolate chips (I would use chocolate protein powder with those), walnut chunks, flaxseed, chia seeds, etc. Have fun with it!
