The one thing about going gluten free (GF) is that we do miss (and crave) certain foods that contain gluten. However I love the challenge of finding, trying, and modifying recipes that I find for gluten-free substitutes. So far I’ve shared with you GF cookies, crackers, and breaded chicken, and now I have a great pizza recipe! Over the past few years I have found GF pizza crust recipes and have tried multiple ones. I’ve done everything from making the crust with mashed cauliflower to one with spinach and cheese. They were all ok but never quite got the taste and texture of real pizza crust. Until now 🙂 This recipe I found online (Source) and it makes such a great GF crust!!! It is similar to a thinner crust, tastes great, and it’s durable (trust me – we use a ton of toppings and this crust def holds up!). I hope you enjoy it!
Pizza Crust (Gluten-Free)
- 2 Cups Almond Flour
- 2 Eggs
- 1 Cup Shredded Cheese (I used cheddar)
- Spices/Herbs (Basil, Oregano, Garlic)
- Dash Sea Salt
- 1 Tbl Olive Oil
Preheat the oven to 350° F. Blend all the dry ingredients. Blend all the wet ingredients in a separate bowl. Add the wet ingredients to the dry and mix together. On a sheet lined with parchment paper roll out the ball of dough (or use your hands to flatten it). You can make individual crusts or one big crust like I did. Cook the crust for about 15 minutes or until it’s as crispy/dark as you want. Add toppings and cook for an additional 10 minutes or so. (You can also forgo the toppings and use the crusts as bread to dip in olive oil!)
For our pizza toppings we used a bunch of random items we had around the kitchen. For our pizza sauce I used a jar of canned tomatoes we had. Back in September we received a big box of tomatoes from our CSA and my mom helped me can them. I had never canned before so I was def excited to have three jars of something I canned myself (with a little help from Mother dearest of course!).
So I cut up the tomatoes and placed them on the crust in addition to slices of cheddar cheese we get from a local Mennonite farm (it’s made from raw milk and it’s delicious!). We topped our pizza with spinach, onions, and turkey (we made this particular pizza right after Thanksgiving hence the use of the turkey!).
It was a great pizza! And the best thing is it’s so big there are leftovers!!!! And who doesn’t love pizza leftovers?!?!?! 🙂
